Pork chops with Purple Potatoes

I got home late afternoon Wednesday from a business trip and wanted a quick supper.  I took out some pork chops and let them thaw in warm water for about an hour.

Then, I pan seared them in oil until they were golden brown before popping them into a 375 degree oven for about an hour. They got a little tough so I think a shorter time in the oven might have been a little bit better.

I also had some purple potatoes so I washed them and stuck them in the oven at the same time.

To serve, I just flattened the baked potatoes, added butter and added the cooked pork chop. I realize the pictures doesn’t make it look too great, but it was an effective meal on a “last minute” plan.

  1. I’m wondering why you didn’t include a few more items on your menu that started with “p”. Might I suggest pickles, peas, pears and pumpkin pie.
