Pizza casserole with a twist

One day last week, I made up a recipe for a pizza casserole that turned out to taste pretty good. It’s just a mixture of zucchini chunks, my homemade pizza sauce and some shredded mozzarella, but it was a hit with those that were brave enough to try it. TM suggested that it might be even better with some pepperoni (not real food, by the way) or some spicy homemade venison sausage (which I believe qualifies as real food).

Pizza Casserole with a Twist

2 zucchini, cut into 1/2 inch chunks (I usually leave some of the skin on)

3 pints homemade pizza sauce

1 cup shredded mozzarella


Mix zucchini and pizza sauce and put into 8 x8 baking pan. Top with shredded cheese. Bake in 350 degree oven until chees melts, about 30 minutes.
