While on vacation last week, we invented (term used loosely) a new addition to our breakfast, mainly served as an awesome topping on scrambled eggs. We loved it so much that we made several times, and even included it as an ingredient in breakfast burritos one day. So, what was you?
I’m calling it “Caramelized Vegetable Medley ” and here’s how to make it.
Caramelized Vegetable Medley
Peppers, such as green, yellow, red and/or orange
Steak seasoning blend (your favorite)
Salt and Pepper
Chop the various vegetables into bite-size chunks. Mix in a bowl with a few teaspoons of steak seasoning, plus salt and pepper. Put a couple tablespoons of olive oil into a frying pan and heat. Add the vegetables to the hot pan and sauté until the vegetables get caramelized.
