I said that I needed zucchini recipes, and I do, but I do have one zucchini trick up my sleeve — grilling it  I have a friend that will not touch many vegetables and even he liked this recipe, and has made it again.

It’s pretty easy.

Grilled zucchini

Slice zuchhini into planks or rounds about 1/4 inch think. Lightly coat with olive oil and sprinkle with salt, pepper, and garlic powder. (Free free to try other spices and let me know how they taste.) Grill on high/hot for about 3-4 minutes per side.

Serve as a side dish for whatever else you’re grilling.
