I’m a huge fan of bagels and lox and this is sort of a play on this typical European breakfast, although we had this a snack on the boat this week. I took all the flavors typical of bagels and lox — salmon, cream cheese, red onion, and capers — and combined them into a salmon spread to put onto tortillas.

Salmon Tortilla Rollups
10 oz package salmon (if you have smoked salmon, that would probably be even better)
8 oz package cream cheese, softened
2 tbsp. fresh lemon juice
1/4 tsp salt
1/2 tsp dried dill
1 tsp chopped fresh chives (if you use dried, you will want to use less)
1/4 cup chopped English cucumber
1/4 cup chopped red onion
1/8 cup chopped capers
4 tortillas (preferable homemade but I used ones that I purchased)
Mix together all ingredients except tortillas. Spread a thin coat of the salmon mixture onto a tortilla. Roll up the tortilla and wrap in wax paper. Repeat for other tortillas. I put the wrapped tortillas into a plastic bag and put them in the refrigerator to allow the cream cheese to firm up. Right before eating, slice into 1 inch pieces.
