Last night, I used a Food Network recipe for Pan Seared Salmon with Citrus Vinegar Glaze and Green Beans to make dinner for myself. This is one of Rachael Ray’s recipes and she’s known for making 30 minute meals, but this one can be done in about half that time!

Other than substituting honey for the brown sugar, I followed the recipe. If I had mad maple syrup on hand, I would have used that instead of honey, since I think it has more of the brown sugar flavor. I wasn’t sure I would be a fan of a citrus sauce on salmon, but it was very good. I think grilling the salmon also would be good, then adding this glaze when you serve it.

I would also probably allow the glaze to thicken just a little more next time, in order to keep it mostly on the salmon and not so much on the fish.
