I haven’t eaten enough vegetables this week. It’s unlike me, but true. So tonight at dinner, I set out to change that. I threw together this quick plate of sautéed vegetables sprinkled with crumbed feta cheese in about 15 minutes.
There goes my lazy reasons for not having many vegetables this week!
I used a combination of cooked spaghetti squash, carrots, cauliflower, asparagus and spinach. It was sautéed in a bit of olive oil and some water, and I also threw in a splash or two of orange juice.
Once it was on the plate, I sprinkled on the feta cheese. Tasted great, and could be adapted to many variations of vegetables that you have on hand. I ate this as an entrée, but it could easily be served as a side dish, as well.
