I love having them on hand for a simple dinner when I’m home alone; they are so easy to warm up after work and top with some cheddar cheese and some diced tomatoes. Or, it’s very handy to pull a small container of them out of the freezer when I’m at a loss for what to put in my lunch for work the next day.
I use a recipe from 100 Days of Real Food. This recipe isn’t as spicy as we prefer, so I usually add in some crushed and dried jalapeno, as well. This week, I also dumped in a cup of my homemade salsa from last summer to see how that might change the flavor of these beans and that worked well.
I can’t wait to have some this week with homemade whole wheat tortillas and some cheese.
