For lunch yesterday, I whipped up this roast beef salad to put on sandwiches, using up the leftover roast beef from Christmas Eve. That was it for the roast beef, other than a few pieces that the dogs were lucky enough to get.
I just “ballparked” this recipe, meaning I didn’t measure anything. Here is the list of ingredients and you can use what ever ratios you have on hand or prefer:
- Roast beef chopped into small pieces
- Shallot, chopped
- Red pepper, chopped
- Celery, chopped
We spread this open face on some slices of Dakota whole wheat bread from Great Harvest. I love this bread with it’s texture, which includes sunflower seeds.
