Grab a banana oatmeal muffin on your way out

I’m always on the lookout for an interesting recipe and this one for banana oatmeal muffins caught my eye on Pinterest Friday. I decided to give them a try right away because I had all the ingredients on hand (a nice plus since I was traveling last week and will be again next week so a trip to the grocery store seemed pointless).

The muffins came out of the oven looking a little flat but they tasted quite good. I substituted equal amounts of honey for the white sugar and they had just enough sweetness. I keep dark bananas in my freezer for recipes just like this one, and it was a great way to use up a few of them. The muffins did stick to the muffin liners so I might try using cooking spray without liners next time. TM also said he thought they were good.

Banana Oatmeal Muffins

2.5 cups old fashioned oats
1 cup plain greek yogurt
2 eggs
3/4 cup sugar {or sweetener of choice — I used an equal amount of honey)}
1.5 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners.

Place all of the ingredients in a blender or food processor, and blend until oats are smooth.

Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.

Makes 12 muffins

  1. With regard to the flat muffin, wonder if it would help to not mix them in the blender. It seems like muffin recipes usually say to only mix until the dry ingredients are moistened.
