My aunt and uncle came out for lunch today and it was sort of a last minute thing. I was able to put together this quick meal without going to the store, while also serving mainly “real food” for this meal.
Herbed Oven Baked Fish — using North Dakota walleye
Brown rice with peas and carrots — using chicken stock instead of water to cook the rice; made this entire dish in my rice cooker including adding frozen peas and carrots near the end of the cooking time
Popovers — to be “real food,” would have been better to use whole wheat flour but didn’t want to chance it with guests
Fruit salad of fresh pineapple chunks and pomegranate — with a dressing made by mixing honey and lime juice
