Fall veggie assortment
I came back this morning from my weekend with family (yes, the same weekend that was to include whole wheat bugs on the menu) and I stopped in at the Glyndon MN farmers market on my way. I have only been to this farmers market once or twice in maybe the last 10 years, and I learned today that I should stop there more.
On this beautiful fall Sunday, they had a huge assortment of pumpkins, a large variety of various kinds of squash, tons of decorative gourds and many other fall vegetables available. I have to admit that I probably bought more than I should have, but it all looked so good.
Here’s a shot of just a few of the items that I purchased (spaghetti squash, zucchini, carrots, potatoes, cantaloupe and that very pretty green and white squash pictured that I already can’t remember the name of).
I also got beets, a butternut squash (that is already in the oven) and this rainbow of peppers (including the dark one that looks purple but that was called a chocolate pepper)..
Like I said, I already had the butternut squash planned for a bowl of butternut squash soup, but what to do with the rest of it? Ideas?
